Why you need a settling tank

Freshly extracted honey settles in the ripener: air bubbles and fine wax particles rise to the surface, where they are easily skimmed off, leaving the honey clear and ready for bottling. Stainless steel settling tanks with airtight lids protect the honey from moisture and odours. Size the tank to a single harvest — several medium tanks are handier than one giant.
