Honey is hygroscopic: in a damp room, open or poorly sealed honey absorbs moisture and can begin to ferment. A dehumidifier holds the relative humidity at 50–60% — safe for settling, drying and storing honey. Essential if you dry honey: paired with a honey dryer, the two work as one system.
